Blue Chair Bay Spiced Rum Apple Crumb Muffins

Ingredients
  

Crumb Topping
  • 10 Tbsp butter melted
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 ¾ cups whole wheat pastry flour
  • ½ tsp salt
  • 1 ¼ tsp apple pie spice or 1 tsp cinnamon ¼ tsp nutmeg
Apple Muffin Batter
  • 2 Tbsp Blue Chair Bay Spiced Rum
  • 1 apple diced into ¼” cubes
  • 8 Tbsp butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp apple pie spice or cinnamon
Blue Chair Bay Spiced Rum Glaze
  • 2 Tbsp Blue Chair Bay Rum
  • ½ cup powdered sugar

Equipment

  • Tulip parchment muffin liners, muffin tin

Method
 

Crumb Topping
  1. Mix all the ingredients together in a medium bowl until large crumbs form.
Apple Muffins
  1. In a small bowl, mix the diced apple and spiced rum.
  2. In a medium bowl, combine the all-purpose and pastry flour, salt, baking soda, baking powder, and apple pie spice.
  3. In the bowl of an electric mixer, cream the butter and sugars until light and fluffy.
  4. Add in the egg and mix until combined.
  5. On low speed add in half the buttermilk and half the dry ingredient mixture and mix until mostly combined.
  6. Add in the remaining buttermilk and dry mixture and mix just until combined.
  7. Fold in the Blue Chair Bay Spiced Rum and apples by hand.
  8. Portion into 12 paper lined muffin tins.
  9. Top with a generous amount of crumb mixture and press the crumbs into the batter a bit.
  10. Bake at 375F for about 25 minutes or until a toothpick inserted comes out clean.
  11. Allow to cool while you make the Blue Chair Bay Spiced Rum Glaze.
Blue Chair Bay Spiced Rum Glaze
  1. In a small bowl, stir the Blue Chair Bay Spiced Rum and powdered sugar to combine.
  2. Adjust consistency with additional Spiced Rum or powdered sugar as desired.
  3. Drizzle cooled muffins with the glaze.
