Method
- Preheat your grill or oven to 425F.
- In a medium bowl, mix the flour, salt, pepper and baking powder.
- Add the butter and mix with your hands until a crumbly mixture forms, or use a pastry cutter, or food processor to combine until crumbly but you can still see the butter.
- Stir in the beer.
- Add the cooked bacon, cheddar cheese, and scallions. Do not over mix.
- Turn out onto a floured board and pat into a rectangle about an inch thick.
- Cut the rectangle in half and place one piece on top of the other, and press into a rectangle again, about an inch thick.
- Cut into desired biscuit shapes, and place on a parchment lined sheet pan.
- Brush with melted butter and sprinkle with flaky sea salt if desired.
- Bake at 425F for about 20 minutes, until lightly golden brown, flaky, and cooked through.
Notes
Any leftovers should be refrigerated and can be reheated on the grill, in a toaster, or oven.
