Beer Biscuits with Bacon, Cheddar, and Scallions

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1/2 cup butter cold and cut into cubes, plus additional melted butter for brushing
  • 8 oz beer any kind you like to drink
  • 4 slices bacon cooked and chopped, I use Snake River Farms Kurobuta Bacon
  • 1 1/4 cups sharp cheddar cheese grated
  • 3 each scallions sliced into thin rounds
  • flaky sea salt optional

Method
 

  1. Preheat your grill or oven to 425F.
  2. In a medium bowl, mix the flour, salt, pepper and baking powder.
  3. Add the butter and mix with your hands until a crumbly mixture forms, or use a pastry cutter, or food processor to combine until crumbly but you can still see the butter.
  4. Stir in the beer.
  5. Add the cooked bacon, cheddar cheese, and scallions. Do not over mix.
  6. Turn out onto a floured board and pat into a rectangle about an inch thick.
  7. Cut the rectangle in half and place one piece on top of the other, and press into a rectangle again, about an inch thick.
  8. Cut into desired biscuit shapes, and place on a parchment lined sheet pan.
  9. Brush with melted butter and sprinkle with flaky sea salt if desired.
  10. Bake at 425F for about 20 minutes, until lightly golden brown, flaky, and cooked through.

Notes

Any leftovers should be refrigerated and can be reheated on the grill, in a toaster, or oven.
